Any property that fits on an item can be part of the system. Ability score increases, skill bonuses, bonus feats, spell slots, flat or random damage boosts, container weight reductions, you name it. Some of them are not available because they're not assigned to monsters (such as Cast Spell properties), others because they're not part of any item (truesight for instance), others because they're too powerful for the item range that this enchanting system is to yield, which is to be something between the random items in the stores and faction gear. Still other item properties are assigned to creatures which don't normally spawn in the game outside DM quests. I've added about 840 different creatures to the list so far, though I was shooting for 1200ish. Sadly, they don't all of them have the most creative item names and descriptions yet. Them there's every possibility that other components will be added to a Treasure script in the future, and make their way to chests of loot somewhere.
However, the consequence is that not everything you dream of may be available to you. You may have to settle for +d4 fire damage instead of +7. It also happens that more powerful monsters tend to drop the higher level components which you'll be unable to use until you have a lot of enchanting experience. The Mystic Forge is limited by your gold, this one needs a time investment. Luckily, you can let the ranger, barbarian or druid do the gathering, and leave the fighter, cleric, wizard and bard to do the enchanting.
As it is now, AB goes to +9, EB to +8, AC to +7, as the second comes with extra damage and the third is much more stackable because it goes on shields, boots, armour, cloaks, amulets and so on. Damages do go into the +dSomething range, but you can't add more than one Damage property to a weapon (unless one of the two is Damage vs Alignment/Race). A number of skills, including the stealth skills, and also all ability bonuses up to +6 are available and can be put on bracers and the like.
Craft Weapon and Craft Armour count your total rank including boosts from items and ability scores, as do the four Enchanting related skills, though Craft Trap is about your base rank much like the Spell Save bonus from Spellcraft and the AC bonus from Tumble.
